Poaching – one of cooking’s oldest techniques – meets spring’s freshest trio in this light, flavorful salmon dish that proves simplicity is often the most satisfying path to the table

To me, asparagus, peas and mushrooms are the trifecta of spring seasonal ingredients. They combine beautifully, forming a savory classic, the woodsy umami of the mushrooms furthering brightening the vibrant earthy-yet-sweet flavors of the peas. And the mushrooms’ velvety softness complements the crisp-tender texture of the green veggies. Just add a protein that plays nicely with the combination and you have a delicious meal that can be made in one pan with minimal effort a la the salmon with mushrooms, asparagus and peas outlined below.
The recipe employs poaching, one of the world’s oldest cooking techniques. Defined as the gentle cooking of food in liquid at relatively low temperatures, poaching preserves flavor, texture, and nutritional quality, while assuring tender moistness. And the recipe embodies the philosophy of bonne femme, literally a” good woman” or “housewife,” referring not to a single fixed recipe, but to preparation style deeply rooted in simple, honest and comforting home cooking traditions.
Poaching food began with ancient civilizations whose cookware couldn’t cope with high heart – slow and gentle cooking was the way to go.
In medieval Europe, poaching became particularly important to royal kitchens, which needed to produce tender, elegant dishes for large numbers without excessive fuel use. Poached meats and fish were commonly served with broths, sauces or wines, reflecting ingredient-forward sophistication, rather than heavy, showy seasoning and presentation.
During the 17th and 18th centuries, French cuisine formalized poaching as a classical technique, refining temperature control and liquid selection. The mastering of poaching remains a mark of culinary technical competence and is embraced in contemporary kitchens because of its association with healthy eating—it requires little to no added fat—and because it emphasizes ingredient quality. Rather than masking flavors, poaching highlights the natural taste and texture of ingredients. (Advances like sous-vide cooking, which uses precise low-temperature water baths, are a technological extension of traditional poaching methods.)

Poached Salmon With Mushrooms, Asparagus & Peas

Ingredients
-2 Salmon Fillets, skin on or off (about 6oz each)
– 1 C Mushrooms, sliced (shiitake, cremini, or button)
– 1 Asparagus bunch, trimmed and cut into 2-inch pieces
– 1 C Peas, fresh or frozen
– 1 Shallot, thinly sliced
-2 Garlic cloves, smashed
– 1-2 T Butter
½ C White wine (optional, but great!)
1 ½ C Broth, chicken, vegetable or fish
1 Lemon, zest and wedges for serving
Salt & Pepper
Olive Oil
Fresh herbs, dill, parsley, or tarragon
Method
Warm a wide skillet over medium heat with a drizzle of olive oil. Add the shallot, garlic, and mushrooms. Cook 3–4 minutes until softened but not browned.
Pour in the white wine (if using) and let it simmer for 1 minute. Add the broth, a pinch of salt, pepper, lemon zest, and a few herb sprigs. Bring to a gentle simmer—never a boil.
Lower the salmon into the liquid, skin side down if the skin is on. Reduce heat to low so the liquid barely trembles. Cover and cook 8–10 minutes, depending on thickness, until the salmon is just opaque and flakes easily.
Transfer the salmon to a warm plate. Add the asparagus and peas to the same pan. Simmer 3–5 minutes until crisp tender.
Swirl in the butter until the broth becomes glossy. Taste and adjust seasoning.
Spoon vegetables and broth into shallow bowls, place the salmon on top, and finish with fresh herbs and a squeeze of lemon. As a fun visual twist, tear the fillets in half or thirds to yield ragged edges.
Variation:
– Creamy version — Add ¼ cup cream after removing the salmon.
– Ginger soy twist — Replace wine with a splash of soy sauce and add sliced ginger.
