Set in the newly opened Fontainebleau hotel, celebrity restaurateur Alan Yau’s latest concept is all flash and fun. Washing Potato is a dim sum concept soaked in pattern-changing neon lights. Tables overlook two open kitchens (the “stages”), where chefs prepare baskets of Cantonese comfort street foods along Hong Kong staples. The steamed bao buns are a can’t-miss, as are the jasmine tea smoked ribs. There’s a variety of juicy dumplings, too, including prawn and chives, squash and pine nuts, and seasonal mushrooms.
