After relocating from Seoul to Manhattan’s Koreatown last year, chef Chang-ho Shin is cooking traditional Korean recipes from a new pantry of distinctly New York ingredients at Joo Ok. Shin has his own farm in Upstate New York, where he grows perilla leaves for his signature enchantingly aromatic perilla oil, and makes more than 30 varieties of sauces, syrups, vinegars, teas, and fermented jang, or Korean mother sauce, from scratch. THE SAGA CONTINUES

FiDi’s favorite fine-dining darling recently reopened after a remodel with a new seafood- and vegetable-focused menu by James Beard Award-winning chef Charlie Mitchell, who took over the kitchen at Saga last year after the tragic sudden death of chef Jamal James Kent. The restaurant’s new rendition is full of nostalgia, with inspiration from Mitchell’s favorite comfort foods growing up, but using premium, often Japanese ingredients, including a tempura-style fish fry, cornbread topped with glossy ossetra caviar, potato salad, and dirty rice with dry-aged madai sea bream paying homage to his grandmother’s Southern cooking.
