EXCITING NEW CHANGES ARE TAKING SHAPE AT THIS LAUDED FAMILY OWNED MARKET

David Findel and Joe Porchetta joined forces with the longtime owner of Pat’s Market, Steven Genticore, in January of this year. Both Findel and Porchetta are Monmouth County residents and have been customers of Pat’s Market for over 25 years.

One day, Genticore casually started talking to the duo about making changes to the venerable 51 year old market, and that was all it took for the partnership to take shape. Both Findel and Porchetta had innovative ideas to enhance the cosmetics of the store in addition to new product offerings.

Findel has been involved in many local, national, and international hospitality ventures throughout his career, the most recent being Ce’ La Vi Bistro in Red Bank. His résumé also includes creating Brando’s in Asbury Park and bringing New York’s top steakhouse, Benjamin’s, to Japan. He is currently opening two new ventures: a second Ce’ La Vi in Westfield and a European brasserie in Central New Jersey, offering his keen culinary talents and sharp insight.

The trio felt confident the market’s loyal customers would welcome the changes. Pat’s Market has undergone a complete renovation, honoring the emporium’s roots but with all new displays and equipment, creating an “old school neighborhood butcher shop.”

“The idea is not to compete with all the wonderful Italian markets in the area, but instead offer something different,” noted Findel.

In addition to prime cuts of beef, pork, and lamb offered at supermarket prices, Pat’s Market cuts all meats to order in whatever shape, size, or cut imaginable. Patrons are encouraged to come in and ask the butchers for anything their heart desires, which will be cut to order on the spot.

The beef is sourced from Black Angus steers raised on small, family owned farms such as Creekstone Farms. The veal is milk fed and humanely raised on Mennonite and Amish farms. The market offers a variety of lamb options, from fresh Colorado varieties to imports, also raised on family farms and fed a vegetarian diet. Pork products include a number of all natural heritage breeds, and the owners are particularly proud of their Hampshire pork, which is hormone and antibiotic free and fed an all vegetarian diet of non GMO corn, soy, and foraged grasses. They also offer premium 100% Berkshire pork from a coalition of independent family owned ranches in the Midwest.

Pat’s Market carries an expansive poultry line, including the country’s best air chilled poultry from Bell and Evans, which ensures no retained or added water and results in tender, flavorful birds.

“We receive the chicken fresh every night from Pennsylvania,” explained Findel, adding, “Our custom short rib burgers have become the talk of the town. We are able to o er this wide range of superior products due to our wonderful relationship with the nation’s premier meat wholesaler, Pat LaFrieda Meat Purveyors.”

The partners attest with conviction their new sandwich station is a cut above. Inspired by some of New York’s best sandwich shops, Pat’s brings the famous prime rib sandwich to a hungry Lincroft. It is slow roasted, sliced thin, and drenched in homemade au jus, then covered in fresh mozzarella on premium New York bread from Royal Crown bakery. Royal Crown bread is also sold at the market and featured in a special open faced sandwich crafted with hand carved Bell and Evans turkey with gravy, then layered with scratch made stuffing and cranberry sauce.

Enhancements were made within the catering department as well. The expert chefs can accommodate anything from sophisticated weddings to simple office gatherings. They even have a chef who can go to customers’ homes to prepare an intimate family holiday meal or special event. For the perfect dish for any party, Findel advises, “Customers can talk to Steven, and he will create any dish their heart desires.” Home delivery is also available.

“To make us all feel like the football season is not totally gone due to the pandemic, Pat’s offers backyard tailgating throughout the winter. We will come with a fully prepared catering package and BBQ grill to make our valued customers feel like they are tailgating at the game. Pat’s will make you the talk of the town.”
